- 2 pork tenderloins (about 450–550 g / 1–1¼ lb each)
- 2 tbsp Ember & Iron Midnight Spark
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 2 cloves garlic, crushed
- 2 sprigs fresh thyme
- Fresh parsley for garnish
🔥Cooking Instructions
1. Prepare the pork
Trim any excess silver skin from the pork tenderloins and pat them dry with paper towels.
2. Season
Brush the pork with olive oil and coat generously with Ember & Iron Midnight Spark. Let the pork rest for 15–20 minutes while the grill preheats.
3. Preheat the grill
Heat your grill to medium-high (200–220°C / 400–425°F). Clean and lightly oil the grates.
4. Grill
Place the pork over direct heat and sear each side for about 2 minutes. Move the tenderloins to indirect heat, close the lid, and continue cooking until the internal temperature reaches 63°C (145°F), about 12–16 minutes more, turning occasionally for even cooking.
5. Finish
During the final few minutes, melt the butter with the garlic and thyme. Brush the mixture over the pork as it finishes cooking.
6. Rest
Transfer the pork to a cutting board and let it rest for 10 minutes before slicing into medallions.

Use a meat thermometer and remove the pork at 63°C (145°F). After resting, it will remain juicy with a slight blush of pink in the center, the ideal doneness for pork tenderloin.
